Winery Background and History


The Déhu family has been cultivating vineyards in the Champagne region since 1787. Benoît Déhu, representing the eighth generation, has infused modern viticultural practices into the family’s legacy. After gaining experience at Bollinger, he returned to his roots with a vision centered on natural viticulture and a profound appreciation for the Meunier grape. In 2011, Benoît dedicated a 1.7-hectare parcel known as “La Rue des Noyers” to biodynamic farming, emphasizing a deep connection to the land and sustainable practices. 


Producer and Winemaker


Benoît Déhu serves as both the proprietor and winemaker of his eponymous estate. His hands-on approach ensures that each bottle reflects his commitment to quality, terroir expression, and minimal intervention winemaking. Benoît’s philosophy centers on understanding and showcasing the potential of the Meunier grape through meticulous vineyard management and traditional vinification techniques. 


Vineyards and Microclimate


The “Initiation” cuvée sources its grapes from the “La Rue des Noyers” parcel and an adjacent plot characterized by clay and sandy soils. Situated in the village of Fossoy, within the Vallée de la Marne, these vineyards benefit from a unique microclimate that combines the influences of the Marne River and the region’s rolling topography. The biodynamic farming practices employed by Benoît, including horse plowing and adherence to lunar cycles, foster a harmonious ecosystem, resulting in grapes that truly express their terroir.

This blend showcases the dominance of Meunier, complemented by the structure and depth of Pinot Noir. 


Vinification & Aging Methods


The grapes undergo vinification in 228-liter oak barrels using natural yeasts, a process that imparts complexity and allows for authentic expression of the fruit. Malolactic fermentation is intentionally blocked to preserve the wine’s natural acidity and vibrant character. Following fermentation, the wine matures in these barrels, enhancing its depth and structure. The “Initiation” cuvée is crafted as a Brut Nature, with zero dosage, highlighting its purity and the true essence of the terroir.

Appearance: Pale golden hue with fine, persistent bubbles.

Nose: Aromas of crunchy red fruits, subtle nutty nuances, and a hint of oxidative complexity.

Palate: A harmonious balance of vibrant acidity and rich texture, featuring flavors of red berries, saline minerality, and a lingering, crisp finish.
