Winery Background and History

Bisol 1542, a historic winery located in Valdobbiadene, Italy, has been producing exceptional Prosecco for over five centuries. The Cartizze hill, encompassing 107 hectares, is considered the “Grand Cru” of Prosecco production. Bisol’s flagship holding comprises 7 acres within this esteemed area, reflecting their commitment to quality and tradition.

Producer and Winemaker

The Bisol family has maintained stewardship of the winery for generations. Their dedication to traditional methods, combined with modern innovations, ensures the production of high-quality Prosecco that embodies the unique terroir of the region.

Vineyards and Micro Climate

The Cartizze vineyards are situated at an elevation of 300 meters above sea level, with south-facing exposure. The terrain features firm rock beneath crumbly stone, providing excellent drainage and contributing to the grapes’ balanced acidity. This microclimate, characterized by complete sunlight exposure and continuous ventilation, allows the Glera grapes to ripen slowly, enhancing their aromatic profile and complexity.

Grape Varietals & Percentage Used

At least 85% Glera

Vinification & Aging Methods

The Glera grapes are hand-harvested to ensure optimal quality. After gentle pressing, the must undergoes primary fermentation in stainless steel tanks at controlled temperatures to preserve the fresh fruit aromas. Secondary fermentation follows the Charmat method, occurring in pressurized tanks for approximately 30 days. This process enhances the wine’s effervescence while maintaining its delicate flavors.

Tasting Notes

This Prosecco displays a straw-yellow hue with a lively, persistent, and fine perlage. The bouquet reveals notes of rose and white wisteria, complemented by aromas of apples, pears, and peaches, with subtle hints of thyme, exotic fruits, and pastry. On the palate, it is rich, intense, and full-bodied, offering an evolving sip that surprises with each taste.

Food & Wine Pairing

Bisol Cartizze Dry Valdobbiadene Superiore di Cartizze DOCG 2022 pairs beautifully with a variety of dishes. Its balanced sweetness and vibrant acidity make it an excellent match for spicy cuisines, such as Indian or Thai dishes. The wine’s fruit-forward profile complements seafood appetizers, creamy pastas, and soft cheeses. Its versatility also makes it a delightful choice for celebratory toasts or as an aperitif.

Service Methods and Temperatures

To fully appreciate its aromatic profile and effervescence, serve this Prosecco well-chilled at a temperature between 6-8°C (43-46°F). Utilize slender, tulip-shaped sparkling wine glasses to concentrate the aromas and showcase the fine bubbles. Pour gently to preserve the mousse, and enjoy immediately upon opening to experience its freshness and vibrancy.

Storage and Aging Potential

While Prosecco is best enjoyed young to capture its fresh and lively character, this wine can be stored for up to 1-2 years after purchase. Store the bottles in a cool, dark place with a constant temperature between 12-15°C (54-59°F), away from direct sunlight or vibrations. Keep the bottles standing upright to minimize contact with the cork. Proper storage will help maintain the wine’s quality until you’re ready to enjoy it.
