Winery Background and History

Ca’ di Rajo is a family-owned winery located in Veneto, Italy, managed by the Cecchetto brothers—Simone, Alessio, and Fabio—the third generation of a family that began winemaking in 1931. The winery harmoniously blends tradition and innovation, utilizing modern technology in winemaking while preserving historic vineyards cultivated using the traditional “bellussera” method. Situated between the Venice Lagoon and the Dolomites, Ca’ di Rajo is dedicated to sustainability and the enhancement of native grape varieties.

Producer and Winemaker

The Cecchetto brothers oversee all aspects of production at Ca’ di Rajo, ensuring that the winery’s commitment to quality and tradition is upheld. Their approach combines modern winemaking techniques with respect for the vineyard’s historical practices, aiming to produce wines that reflect the unique terroir of the region.

Vineyards and Microclimate

The vineyards are located in Rai di San Polo di Piave, within the Treviso province of Northeast Italy. This area is renowned for its mild climate, characterized by hot summer days and cool nights. The well-drained clay and limestone soils provide an ideal environment for grape cultivation, contributing to the development of fresh acidity and complex flavors in the fruit.

Vinification & Aging Methods

The grapes are hand-harvested in mid-September and undergo soft pressing. The sparkling wine production follows the long Charmat method, with the second fermentation taking place in temperature-controlled stainless steel tanks. This process preserves the fresh and fruity characteristics of the wine, resulting in a vibrant and approachable sparkling wine.

Pour gently into a tulip-shaped glass to concentrate the aromas and maintain the fine perlage. Allowing the wine a few moments to breathe after pouring can enhance its expressive character.
