Winery Background and History

Founded in 1808 by François Drappier, Champagne Drappier is a family-owned house located in Urville, within the Côte des Bar region of Champagne, France. Over two centuries, the Drappier family has cultivated vineyards with a focus on traditional methods and sustainability. Notably, the estate practices organic viticulture on a significant portion of its vineyards, reflecting their commitment to environmental stewardship. The Clarevallis cuvée pays homage to the nearby Clairvaux Abbey, established in 1115 by Saint Bernard, underscoring the deep historical roots of the region.

Producer and Winemaker

Currently, the estate is managed by Michel Drappier, representing the seventh generation of the Drappier family. Under his leadership, the house has embraced both tradition and innovation, including the use of minimal sulfur in winemaking and the revival of historic grape varieties. Michel’s commitment to authenticity and quality is evident in the meticulous care taken during vinification, ensuring that each cuvée reflects the family’s heritage and the distinct characteristics of their vineyards.

Vineyards and Microclimate

The Drappier vineyards encompass approximately 100 hectares, primarily situated around Urville in the Côte des Bar. This southernmost sub-region of Champagne is characterized by Kimmeridgian limestone soils, similar to those found in Chablis, imparting a distinctive minerality to the wines. The microclimate here offers warmer conditions compared to northern Champagne, providing an ideal environment for the cultivation of Pinot Noir, Chardonnay, Pinot Meunier, and Blanc Vrai (Pinot Blanc). The combination of soil composition and climate contributes to the development of rich, aromatic profiles in the resulting wines.

Vinification & Aging Methods

The Clarevallis Extra Brut NV is crafted from organically farmed estate fruit, emphasizing a natural and minimalist approach. Only the first pressing juices are utilized to ensure purity. Fermentation occurs spontaneously with indigenous yeasts, and malolactic fermentation is allowed to proceed naturally. The wine is aged on the lees for approximately four years, enhancing complexity and texture. A low dosage of 4 grams per liter is added, resulting in an Extra Brut Champagne that truly reflects its terroir and the unique characteristics of each grape variety. Notably, minimal sulfur is used, with content below 20 mg/L, and the wine undergoes neither cold stabilization nor filtration, preserving its authentic character.

Tasting Notes

The Champagne Drappier Clarevallis Extra Brut NV presents a light golden yellow hue with pink reflections and a lively mousse. The nose is complex and fragrant, offering aromas of apples, pears, quinces, elderflower, verbena, and grapefruit peel, complemented by subtle yeast autolysis. On the palate, it is silky and sensual, with pronounced minerality and juicy fruit notes. The finish is savory, umami-rich, and slightly phenolic, showcasing a powerful body with well-integrated mousse and energetic structure.

Food & Wine Pairing

This elegant and refined Champagne is an excellent aperitif and pairs beautifully with a variety of dishes. Its crisp acidity and mineral undertones make it a perfect match for fresh seafood, such as oysters, scallops, or a seafood blanquette. The wine’s subtle complexity also complements light starters, including spring vegetable tarts or veal carpaccio with white truffles. For cheese pairings, consider soft, creamy varieties like Brie or Camembert, which harmonize with the Champagne’s delicate flavors.

Service Methods and Temperatures

To fully appreciate the nuances of the Clarevallis Extra Brut NV, it is recommended to serve the Champagne at a temperature between 7°C and 9°C (45°F to 48°F). Chilling the bottle gradually in an ice bucket for about 20 minutes ensures optimal serving conditions. Utilizing a tulip-shaped glass allows the aromas to concentrate and the flavors to fully express themselves. Pour gently to preserve the delicate effervescence, and consider allowing the wine a moment to breathe in the glass before tasting, which can enhance its aromatic profile.

Storage and Aging Potential

While the Clarevallis Extra Brut NV is crafted for immediate enjoyment, it also possesses the structure to benefit from short-term aging. When stored in optimal conditions—away from light, at a consistent temperature of around 12°C (54°F), and with appropriate humidity—the Champagne can develop additional complexity over 2 to 3 years. During this period, expect the emergence of more pronounced toasty and nutty notes, adding depth to its fresh fruit character. However, extended aging beyond this window may diminish its vibrant acidity and effervescence, which are central to its charm.
