Winery Background and History
Château Canon, established in the 18th century, is a Premier Grand Cru Classé estate located in Saint-Émilion, Bordeaux. Known for producing wines that epitomize the elegance and complexity of the region, the estate introduced Croix Canon as its second label to offer a more accessible expression of its terroir. Croix Canon benefits from the same meticulous vineyard management and winemaking expertise as the grand vin, reflecting the estate’s commitment to quality across its portfolio.
Producer and Winemaker
Croix Canon is produced by the team at Château Canon, under the ownership of the Wertheimer family, who also own the renowned fashion house Chanel. The estate’s technical director, Nicolas Audebert, brings extensive experience from prestigious wineries in France and Argentina. His approach combines respect for traditional Bordeaux practices with innovative techniques, aiming to express the unique characteristics of the Saint-Émilion terroir in each vintage.
Vineyards and Micro Climate
The vineyards of Château Canon are situated on the limestone plateau of Saint-Émilion, characterized by clay and limestone soils that provide excellent drainage and mineral complexity. The microclimate benefits from the moderating influence of the Dordogne River, offering mild winters and warm summers. These conditions, along with sustainable vineyard practices, promote the cultivation of high-quality Merlot and Cabernet Franc grapes, the primary varietals used in Croix Canon.
Vinification & Aging Methods
The 2017 Croix Canon underwent vinification in temperature-controlled stainless steel vats, allowing for precise fermentation management. Malolactic fermentation was conducted partly in new oak barrels and partly in stainless steel tanks to enhance complexity while preserving fruit purity. The wine was then aged for 18 months in French oak barrels, with 25% being new oak, imparting subtle oak influences and contributing to the wine’s structure and aging potential.
Tasting Notes
The 2017 Croix Canon exhibits a deep ruby color. The nose offers aromas of fresh blackcurrants, blueberries, and cherries, complemented by floral notes of broom and hints of rosemary and eucalyptus. On the palate, the wine is medium to full-bodied, showcasing a delicate, smooth texture with flavors of ripe red and black fruits. The finish is mineral-driven and chalky, reflecting the limestone terroir, with a persistent and balanced aftertaste.
Food & Wine Pairing
This wine pairs excellently with dishes such as roast lamb, grilled duck breast, and mushroom risotto. Its balanced acidity and tannic structure complement the richness of these dishes, while the wine’s fruit-forward profile enhances their flavors. Additionally, it pairs well with aged cheeses and charcuterie, making it a versatile choice for various culinary experiences.
Service Methods and Temperatures
To fully appreciate the aromatic profile and complexity of the 2017 Croix Canon, it is recommended to serve the wine at a temperature between 16-18°C (61-64°F). Decanting the wine for about an hour before serving can help open up its aromas and flavors, providing a more expressive tasting experience. Using a Bordeaux-style glass will further enhance the wine’s characteristics.
Storage and Aging Potential
The 2017 Croix Canon has the potential to age gracefully over the next 5 to 8 years. When stored in optimal conditions—a cool, dark place with consistent temperature and humidity—the wine will develop additional complexity, with tertiary aromas and flavors emerging over time. However, it is also approachable in its youth, offering vibrant fruit flavors and a smooth texture.
