Winery Background and History

Domaine de Bila-Haut, established by renowned winemaker Michel Chapoutier, is located in the Roussillon region of Southern France. Chapoutier, known for his commitment to biodynamic viticulture, expanded his winemaking ventures to Roussillon in the late 1990s, attracted by the region’s diverse terroirs and rich history. The estate focuses on producing wines that express the unique characteristics of the region, combining traditional methods with modern techniques to craft wines of distinction and quality.

Michel Chapoutier, a visionary in the wine industry, leads the winemaking team at Domaine de Bila-Haut. Vineyards and Microclimate

The vineyards of Domaine de Bila-Haut are situated on the slopes of the Agly Valley in the Côtes du Roussillon Villages appellation. The diverse soils, comprising gneiss and schist from the Devonian period, contribute to the complexity and minerality of the wines. The Mediterranean climate, characterized by hot, dry summers and mild winters, along with the influence of the Tramontane wind, creates optimal conditions for grape cultivation, allowing for the development of concentrated flavors and balanced acidity.

Vinification & Aging Methods

The grapes are hand-harvested to ensure optimal ripeness and quality. Upon arrival at the winery, they are fully destemmed to prevent excessive tannin extraction. Fermentation occurs in temperature-controlled stainless steel vats, with extraction achieved through regular punch-downs to enhance color and flavor. Maceration lasts between two to four weeks, depending on daily tastings. Following fermentation, the wine is aged in vats to preserve its fresh fruit character and to allow the terroir’s expression to shine through.

Tasting Notes

The 2021 Les Vignes de Bila-Haut Rouge presents a deep garnet red hue. On the nose, it offers inviting aromas of black cherry and dark berries, complemented by subtle hints of spice and earthy undertones. The palate is fleshy and well-structured, showcasing concentrated flavors of dark cherry, plum, and raspberry tart, with nuances of grilled fig. The dense finish reveals notes of dark chocolate, supported by firm tannins that provide a balanced and lingering aftertaste. 


Food & Wine Pairing

This versatile red pairs well with a variety of dishes. Its robust structure and rich fruit flavors make it an excellent companion to grilled or roasted meats, such as lamb, beef, or game. It also complements hearty stews, sausages, and dishes featuring Mediterranean herbs. For a vegetarian option, consider pairing it with ratatouille or stuffed peppers. The wine’s balanced acidity and tannins also make it a good match for aged cheeses like Comté or Gouda.


Service Methods and Temperatures

To fully appreciate its aromatic complexity and depth, serve the Les Vignes de Bila-Haut Rouge at a temperature of 16-18°C (60-64°F). Decanting the wine for about 30 minutes prior to serving can help open up its bouquet and soften the tannins. Use large, tulip-shaped red wine glasses to concentrate the aromas and allow for proper aeration. This wine is ready to drink upon release but can benefit from short-term aging.


Storage and Aging Potential

Stored under optimal conditions—away from direct light, at a consistent temperature of around 12°C (54°F), and with appropriate humidity—this wine can develop additional complexity over the next 2 to 3 years. While it is enjoyable in its youth for its vibrant fruit flavors, aging may enhance its tertiary notes, adding layers of earthiness and spice.
