Winery Background and History

Domaine Fouassier, located in the Sancerre appellation of the Loire Valley, France, is one of the oldest winegrowing families in the village, with a lineage dating back to 1742. Currently managed by cousins Benoît and Paul Fouassier, representing the 10th generation, the estate has been a pioneer in vinification by lieu-dit since the early 1980s, focusing on selecting the best parcels to express the unique terroir of each vineyard site. Over 15 years ago, the estate transitioned to organic and biodynamic farming practices, emphasizing natural viticulture to ensure the health of their vineyards and the purity of their wines. 


Producer and Winemaker

Benoît and Paul Fouassier lead Domaine Fouassier with a philosophy that combines respect for traditional methods with modern innovations. They are dedicated to minimal intervention in the winemaking process, allowing the wines to naturally reflect their terroir. Their commitment to organic and biodynamic principles underscores their dedication to producing authentic and expressive Sancerre wines. 


Vineyards and Microclimate

The Clos Paradis vineyard spans 5.1 hectares in the heart of Sancerre, situated on south-facing slopes at an elevation of approximately 885 feet. The soils are composed of limestone from ‘Buzançais’ and ‘lités supérieurs’ on lower ‘Kimmeridgien’ strata, contributing to the wine’s minerality and complexity. The average vine age is 45 years, and the vineyard is cultivated using organic and biodynamic methods. The Sancerre region benefits from a continental climate, characterized by cold winters and warm summers, with the proximity to the Loire River providing a moderating influence that reduces the risk of frost and promotes a favorable growing environment.

Vinification & Aging Methods

The grapes undergo pneumatic pressing and spontaneous fermentation with native yeast in stainless steel tanks. Malolactic fermentation is allowed to proceed fully, enhancing the wine’s texture and complexity. The wine is then aged on its lees in stainless steel tanks for approximately 12 months, with cellar work guided by the lunar calendar to respect natural rhythms. This approach preserves the purity of the fruit while allowing the expression of the diverse terroirs.

Tasting Notes

The 2022 Clos Paradis offers bright fruit aromas, including green apple, nectarine, and crushed white blossom. The palate echoes the nose, completing with a suggestion of lemon citrus and a saline finish. 


Food & Wine Pairing

This Sancerre pairs beautifully with seafood such as lobster or monkfish. Its vibrant acidity and citrus notes also complement goat cheese, particularly the local Crottin de Chavignol, as well as salads and light poultry dishes. 


Service Methods and Temperatures

To fully appreciate its aromatic complexity and crispness, serve the 2022 Clos Paradis well-chilled at around 8-10°C (46-50°F) in medium-sized white wine glasses. This temperature accentuates the wine’s freshness and allows its nuanced aromas to shine.


Storage and Aging Potential

While this Sancerre is delightful in its youth, displaying vibrant fruit and lively acidity, it can also develop additional complexity with short-term cellaring. When stored properly in a cool, dark environment with stable temperatures, it can be enjoyed over the next 3 to 5 years.
