Winery Background and History
The Mabileau family has been producing wine in Saint-Nicolas-de-Bourgueil since the late 1800s. In 1988, Frédéric Mabileau established his own estate by planting vines in the Les Rouillères plot. Over the years, the estate expanded to 35 hectares, encompassing appellations such as Saint-Nicolas-de-Bourgueil, Bourgueil, Saumur, and Anjou. The family transitioned to organic viticulture in 2007 and adopted biodynamic principles, achieving Biodyvin certification in 2018.
Producer and Winemaker
Following Frédéric Mabileau’s untimely passing in 2020, his sons, Rémy and Charly, assumed leadership of the estate. They continue their father’s legacy, maintaining a commitment to organic and biodynamic farming practices. Their approach emphasizes minimal intervention, allowing the wines to authentically express their terroir.
Vineyards and Microclimate
The Les Rouillères vineyard is characterized by sandy-gravel soils deposited by the Loire River, providing excellent drainage and contributing to the wine’s freshness and minerality. The region’s temperate climate, influenced by the nearby river, offers ideal conditions for cultivating Cabernet Franc, with warm summers and mild winters promoting balanced ripening.

Vinification & Aging Methods
The 2017 Les Rouillères was crafted from hand-harvested, organically grown grapes. After destemming, fermentation occurred using indigenous yeasts. The wine was aged for eight months in vats, with minimal sulfur addition (totaling 30 mg/L), to preserve the purity of the fruit.

Tasting Notes
This wine exhibits charming red-black fruit aromas with a hint of pencil shavings. The palate is juicy and succulent, featuring sweet, ripe tannins. Notes of red berries and ripe plums are present, with decent acidity and persistence.
Food & Wine Pairing
Les Rouillères pairs well with a variety of dishes, including roasted poultry, grilled vegetables, and soft cheeses. Its vibrant fruit profile and balanced acidity complement both light and moderately rich flavors, making it versatile for various cuisines.
Service Methods and Temperatures
For optimal enjoyment, serve this wine slightly chilled at around 14-16°C (57-61°F). Decanting is not necessary; however, allowing the wine to breathe for 15-20 minutes before serving can enhance its aromatic expression. Using medium-sized red wine glasses will help concentrate its bouquet.
Storage and Aging Potential
The 2017 vintage can be enjoyed now for its fresh fruit character but also has the potential to develop further complexity with short-term aging. When stored in optimal conditions—cool, dark, and with stable temperatures—the wine can evolve gracefully over the next 3 to 5 years.
