Vinification & Aging Methods:
The winemaking process for the Chablis Saint Martin begins with the collection of whole bunches, which are gently pressed using a pneumatic press. The must undergoes a 12-hour settling period at temperatures between 10 to 12°C in specially designed wide tanks to facilitate natural clarification. Fermentation spans 21 days at 17°C and occurs in both stainless steel tanks and wooden casks known as “foudres” with a capacity of 55 hectoliters, with 15% of the wine fermented in these wooden casks. Both alcoholic and malolactic fermentations are carried out to enhance complexity and mouthfeel. Following fermentation, the wine is aged on fine lees for an average of six months, with the same 15% proportion aged in wooden casks. This approach aims to preserve the wine’s freshness and minerality while adding subtle complexity and structure.
