Winery Background and History

Olivier Merlin, a renowned winemaker in the Mâconnais region of Burgundy, France, established his domaine in 1987. After gaining experience in California, he returned to France and took over an old estate in La Roche-Vineuse. Over the years, Olivier, alongside his wife Corinne, expanded their holdings and gained acclaim for revitalizing the reputation of Mâcon wines. Their commitment to traditional viticulture and meticulous winemaking has positioned Domaine Merlin as a benchmark for quality in the region.

Producer and Winemaker

Olivier Merlin leads the winemaking at his eponymous domaine. Known for his hands-on approach, he emphasizes low yields, manual harvesting, and minimal intervention in the cellar. His philosophy centers on expressing the purity and minerality of the terroir, resulting in wines that are both elegant and complex.

Vineyards and Microclimate

The Mâcon-La Roche Vineuse appellation is situated in the Mâconnais sub-region of Burgundy. The vineyards benefit from a continental climate, characterized by cold winters and warm summers. The soils are predominantly limestone and clay, providing excellent drainage and contributing to the minerality of the wines. The 2021 vintage experienced a challenging growing season with spring frosts and a cool, wet summer, leading to lower yields but high-quality grapes with vibrant acidity and concentrated flavors.

Grape Varietals & Percentage Used

100% Chardonnay

Vinification & Aging Methods

The grapes are hand-harvested and undergo a gentle pressing to extract the juice. Fermentation occurs in oak barrels, with a portion being new, to add complexity and structure. The wine undergoes malolactic fermentation to soften acidity and enhance mouthfeel. Aging on the lees for several months with regular bâtonnage (lees stirring) imparts richness and depth to the final wine.

ABV (Alcohol by Volume)

Tasting Notes

The 2021 Mâcon-La Roche Vineuse displays aromas of white flowers, citrus fruits, and a hint of vanilla. On the palate, it is fresh and lively, with flavors of green apple, lemon zest, and a subtle minerality. The finish is crisp and clean, showcasing the wine’s balanced acidity and finesse.

Food & Wine Pairing

This Chardonnay pairs well with seafood dishes such as grilled shrimp or seared scallops. It also complements poultry in creamy sauces, mushroom risotto, and soft cheeses like Brie or Camembert. The wine’s acidity and minerality make it a versatile companion to a variety of dishes.

Service Methods and Temperatures

Serve chilled at 10-12°C (50-54°F) in medium-sized white wine glasses to fully appreciate its aromatic profile and freshness. Decanting is not necessary, but allowing the wine to breathe for a few minutes after pouring can enhance its expression.

Storage and Aging Potential

While enjoyable upon release, this wine can benefit from short-term cellaring. Proper storage in a cool, dark environment with stable temperatures will allow it to develop additional complexity over the next 3 to 5 years.
