Vineyards and Microclimate

The grapes for the Adobe Reserva Carménère are sourced from Emiliana’s organic vineyards in the Colchagua Valley, part of Chile’s Central Valley. This region is characterized by a Mediterranean climate, with warm, dry summers and mild winters, providing ideal conditions for ripening Carménère. The vineyards benefit from well-draining alluvial soils and significant diurnal temperature variations, which contribute to the development of concentrated flavors and balanced acidity in the grapes.

Vinification & Aging Methods

The organically grown grapes are hand-harvested at optimal ripeness. After careful selection, they undergo a week-long pre-fermentation cold maceration at 8ºC (46ºF) to extract more fruit characteristics. Alcoholic fermentation takes place at 25º–28ºC (77º–82ºF) with pump-overs determined by daily tastings. Post-fermentation, 20% of the wine is aged in French oak barrels for six months, while the remaining 80% rests in stainless steel tanks to preserve the varietal’s fresh fruit flavors. This approach ensures a harmonious balance between fruit purity and subtle oak complexity.

Tasting Notes

The 2021 Adobe Reserva Carménère presents a purplish-red hue. On the nose, it offers intense aromas of ripe blackberry and blueberry, complemented by subtle notes of toast and blackcurrant. The palate is silky-smooth, with a medium to full body showcasing flavors of plum, redcurrant, and a hint of mocha. The wine’s smooth and velvety tannins and good density lead to a long, creamy finish. This wine exemplifies the purity of fruit and cool freshness characteristic of Carménère from the Colchagua Valley. 


Food & Wine Pairing

This versatile Carménère pairs well with a variety of dishes. Its rich fruit profile and balanced structure make it an excellent match for barbecued red meats, such as beef steaks or lamb chops. Service Methods and Temperatures

To fully appreciate its aromatic complexity and depth, serve the Adobe Reserva Carménère at a temperature between 15°C and 18°C (59°F to 64°F). Decanting the wine for about 30 minutes prior to serving can help open up its bouquet and soften the tannins. Using medium-sized red wine glasses will enhance the tasting experience by concentrating the aromas.


Storage and Aging Potential

While crafted for immediate enjoyment, the 2021 Adobe Reserva Carménère possesses the structure to benefit from short-term cellaring. Stored under optimal conditions—away from direct light, at a consistent temperature of around 12°C (54°F), and with appropriate humidity—the wine can develop additional complexity over the next 2 to 3 years. Aging may enhance its tertiary notes, adding layers of earthiness and spice.
