Winery Background and History

Emiliana Organic Vineyards, established in 1986 in Chile, is renowned for its commitment to organic and biodynamic viticulture. As one of the largest organic wineries in the world, Emiliana focuses on producing wines that reflect the purity of their terroir while promoting environmental sustainability. The name “Coyam” translates to “oak forest” in the Mapuche language, paying homage to the native trees surrounding the vineyards. This flagship wine embodies the winery’s philosophy of harmony between nature and winemaking.

Producer and Winemaker

The winemaking team at Emiliana is dedicated to crafting wines that express the unique characteristics of their vineyards. Utilizing organic and biodynamic practices, they ensure that the grapes reach optimal ripeness without the use of synthetic chemicals. The team’s approach emphasizes minimal intervention, allowing the natural flavors and aromas of the fruit to shine through. Their expertise and commitment to quality have positioned Emiliana as a leader in sustainable winemaking.

Vineyards and Micro Climate

The grapes for Coyam 2020 are sourced from the Los Robles estate in the Colchagua Valley, situated at an altitude of 245 meters above sea level. The vineyard spans 134 hectares, with 80 hectares dedicated to red varieties. The soil composition is primarily clay-loam, providing excellent drainage and nutrient balance. The Mediterranean climate, characterized by warm days and cool nights, allows for slow and even ripening of the grapes, contributing to the wine’s complexity and balance.

Vinification & Aging Methods

The 2020 vintage began with hand-harvesting the grapes at optimal ripeness. After careful selection, the grapes underwent fermentation in stainless steel tanks with native yeasts to preserve the purity of the fruit. Post-fermentation, the wine was aged for 14 months in French oak barrels, with 80% of the barrels being new and 20% second-use. This aging process imparts subtle oak nuances and enhances the wine’s structure and complexity.

Tasting Notes

Coyam 2020 displays a deep red color with raspberry-colored rims. The nose is complex, offering aromas of black fruits such as plums and blackberries, complemented by fresh Mediterranean herbs like rosemary and lavender, along with hints of mocha and graphite. On the palate, it presents a silky texture with medium volume and elegant tannins. Flavors of ripe black fruit are balanced by freshness and a sappy florality, with subtle notes of violet, mocha, pencil shavings, and licorice. The finish is long and lingering, leaving a lasting impression of fruit and spice.

Food & Wine Pairing

This versatile red blend pairs well with a variety of dishes, including grilled meats, roasted lamb, and hearty stews. Its balanced acidity and tannic structure make it an excellent companion to rich pasta dishes, such as beef lasagna or mushroom risotto. For cheese lovers, consider pairing Coyam 2020 with aged cheeses like Manchego or Gouda, which will complement the wine’s depth and complexity.

Service Methods and Temperatures

To fully appreciate its aromatic profile and structure, serve Coyam 2020 at a temperature between 16°C and 18°C (60°F to 64°F). Decanting the wine for about 30 minutes before serving can help to aerate it, allowing the bouquet to open up and the tannins to soften, enhancing the overall tasting experience. Using large, Bordeaux-style glasses will further concentrate the aromas and direct the wine to the appropriate areas of the palate.

Storage and Aging Potential

Stored under optimal conditions—away from direct light, at a consistent temperature around 12°C (54°F), and with moderate humidity—Coyam 2020 has the potential to age gracefully for 8 to 10 years. As it matures, the wine is expected to develop additional layers of complexity, with tertiary notes such as leather, tobacco, and earthy undertones emerging to complement the existing fruit and spice profile. Regularly monitoring the wine’s development will ensure it is enjoyed at its peak maturity.
