Vinification & Aging Methods
Upon reaching optimal ripeness, the grapes are hand-harvested and meticulously sorted. After destemming, fermentation occurs in temperature-controlled stainless steel tanks, with regular pump-overs to extract color, flavor, and tannins. Following alcoholic fermentation, malolactic fermentation takes place to enhance the wine’s texture and stability. The wine is then aged for one year, partly in oak barrels to impart subtle complexity and partly in stainless steel vats to preserve fresh fruit characteristics. This balanced approach results in a wine that is both structured and vibrant.
