Winery Background and History

Domaine Henri Bourgeois, established in Chavignol, France, has been a family-owned winery for ten generations. Situated in the heart of Sancerre and Pouilly-Fumé, the family cultivates a mosaic of plots, respecting unique terroirs of Kimmeridgian Marl, Silex, and Limestone Clays. Their dedication to expressing the true essence of these terroirs has positioned them among the leading producers in the region.

Vineyards and Micro Climate

The “Les Côtes aux Valets” vineyard, planted in 1986, spans 1.06 hectares in the village of Vinon, south of Sancerre. The chalky-clay soil, known as “Bannon,” imparts a distinctive mineral quality to the wine. The microclimate, influenced by the Loire River, offers optimal conditions for Sauvignon Blanc, balancing acidity and aromatic expression.

Vinification & Aging Methods

Grapes are hand-picked at optimal maturity. They undergo slow pressing at low pressure for 2.5 to 3 hours. The must is cold-settled on lees at 8°C, with daily tastings determining the duration. Lees are resuspended daily for four days to enhance texture and aromatic potential. Alcoholic fermentation occurs in stainless steel tanks over approximately 30 days, starting at 15°C and gradually reaching 19°C. The first racking takes place between 5 to 15 days after fermentation concludes.
