Winery Background and History

Founded in 1858 by Eliseo Bisol, the Bisol winery is one of the oldest in Valdobbiadene, a village north of Venice. The region’s steep hillsides, though challenging to cultivate, provide an ideal environment for vine growth. Over generations, the Bisol family has maintained a commitment to quality, focusing on traditional methods and sustainable practices. Today, the winery is renowned for producing exceptional Prosecco that reflects the unique terroir of the region.

Producer and Winemaker

The Bisol family continues to oversee the winery’s operations, with Gianluca Bisol serving as President and CEO, and his brother, Desiderio Bisol, as chief enologist and technical director. Their leadership ensures that the winery’s rich heritage and dedication to excellence are upheld. Together, they have expanded the winery’s reach, introducing innovative techniques while honoring the traditions that have defined Bisol for over a century.

Vineyards and Micro Climate

The vineyards are situated in the heart of Valdobbiadene, within the Veneto region of Italy, at elevations of approximately 300 meters (984 feet) with southern exposure. The steep, south-facing slopes provide optimal sunlight, while the elevation ensures cool temperatures, contributing to the grapes’ balanced acidity and aromatic profile. The region’s unique microclimate, influenced by its proximity to the Alps and the Adriatic Sea, fosters the development of high-quality Glera grapes essential for Prosecco production.

Grape Varietals & Percentage Used

At least 85% Glera, with the potential inclusion of other authorized local varieties.

Vinification & Aging Methods

The grapes are hand-harvested from the steep hillsides to ensure optimal selection. After gentle pressing, the must undergoes fermentation in stainless steel tanks at controlled temperatures to preserve the fresh fruit aromas. The secondary fermentation, responsible for the wine’s effervescence, occurs using the Charmat method in pressurized tanks, a process that maintains the wine’s vibrant and youthful character. The wine is then filtered and stabilized before bottling, ensuring clarity and stability.

Tasting Notes

This Prosecco presents a brilliant, bright straw yellow color with lime-green highlights and a fine, lively perlage. The nose offers inviting aromas of green apple, wisteria, and aromatic herbs, complemented by subtle hints of crushed stones. On the palate, it delivers flavors of Bartlett pear, citrus, and thyme, accompanied by an elegant, continuous mousse. The finish is crisp and dry, with a pleasant touch of sea salt and crushed stone.

Food & Wine Pairing

Jeio Brut Valdobbiadene Prosecco Superiore DOCG NV pairs beautifully with a variety of dishes. Its vibrant acidity and elegant mousse make it an excellent companion for seafood appetizers, such as shrimp cocktail or smoked salmon canapés. The wine’s fresh fruit flavors complement light pasta dishes with lemon and herb sauces, as well as creamy risottos. For cheese pairings, consider soft, mild cheeses like mozzarella or burrata. Its versatility also makes it a delightful aperitif on its own.

Service Methods and Temperatures

To fully appreciate its aromatic profile and effervescence, serve this Prosecco well-chilled at a temperature between 6-8°C (43-46°F). Use slender, tulip-shaped sparkling wine glasses to concentrate the aromas and showcase the fine bubbles. Pour gently to preserve the mousse, and enjoy upon opening to experience its freshness and vibrancy.

Storage and Aging Potential

While Prosecco is best enjoyed young to capture its fresh and lively character, this wine can be stored for up to one year after purchase. Store the bottles in a cool, dark place with a constant temperature, ideally between 10-15°C (50-59°F), and away from direct sunlight or vibrations. Keep the bottles standing upright to minimize contact with the cork. Proper storage will help maintain the wine’s quality until you’re ready to enjoy it.
