Winery Background and History


Jérôme Prévost, a renowned grower-producer in the Champagne region of France, established Champagne La Closerie in 1998. Inheriting his grandmother’s two-hectare vineyard, Les Béguines, located in the Montagne de Reims village of Gueux, Prévost has dedicated himself to producing terroir-driven Champagnes. His meticulous vineyard practices and commitment to organic farming have earned his wines a cult following among enthusiasts.

Vineyards and Microclimate


The “La Closerie Les Béguines” cuvée is sourced exclusively from the Les Béguines vineyard in Gueux. This site is characterized by clay-limestone soils that impart distinct minerality to the wines. The region’s cool climate, combined with Prévost’s organic farming practices, fosters the development of grapes with vibrant acidity and expressive fruit profiles.

Vinification & Aging Methods


Prévost employs traditional vinification methods, fermenting with indigenous yeasts in a mix of used barriques and 600L demi-muids. The Champagnes are disgorged approximately 16 months after bottling and finished with no dosage, resulting in an Extra Brut style that highlights the purity and expression of the terroir.

Tasting Notes

Appearance: Pale golden hue with fine, persistent bubbles.

Nose: Aromas of honeysuckle, lemon, and apricot, complemented by subtle oxidative notes.

Palate: Elegant and fruity with a clean minerality, slight oxidative character, vibrant acidity, and a rich texture. 


Food & Wine Pairing


This Champagne pairs beautifully with a variety of dishes, including seafood such as oysters and scallops, light poultry dishes, and creamy cheeses. Its crisp acidity and mineral undertones also make it an excellent companion to sushi and sashimi.


Service Methods and Temperatures


For optimal enjoyment, serve chilled at 8-10°C (46-50°F) in a tulip-shaped glass to concentrate the aromas and appreciate the fine effervescence. Allowing the wine a few moments to breathe after pouring can enhance its expressive character.


Storage and Aging Potential


While crafted for immediate enjoyment, this Champagne can develop additional complexity with careful cellaring over 3-5 years. Store bottles horizontally in a cool, dark place with a consistent temperature to preserve its quality.
