Vinification & Aging Methods
After hand-harvesting, the grapes undergo a 13–14 day maceration in stainless steel tanks at controlled temperatures between 27°C and 32°C. A gentle “shower” system is used to wet the cap, ensuring delicate extraction of color and tannins. Malolactic fermentation follows in steel tanks. The wine is then aged for a minimum of 3 years, including 24 months in large oak casks, followed by additional refinement in the bottle.
