Winery Background and History
Domaine Olivier Merlin, established in 1987 by Corinne and Olivier Merlin, is located in La Roche-Vineuse within the Mâconnais region of Burgundy, France. Over the years, the estate has expanded to over 15 hectares, encompassing vineyards in both the Mâconnais and Moulin-à-Vent appellations. The domaine is renowned for its meticulous vineyard management and traditional winemaking techniques, producing wines that authentically express the terroir of the region. In 2018, their sons, Paul and Théo Merlin, joined the family business, continuing the legacy of quality and innovation.
Producer and Winemaker
Olivier Merlin serves as the winemaker at Domaine Olivier Merlin. With decades of experience and a deep passion for viticulture, Olivier focuses on sustainable farming practices and minimal intervention in the cellar. His approach emphasizes the expression of terroir, crafting wines that are both elegant and reflective of their origin.
Vineyards and Microclimate
The Pouilly-Fuissé appellation is situated in the southern part of the Mâconnais region. The vineyards benefit from a continental climate with warm summers and cool winters, providing ideal conditions for Chardonnay cultivation. The soils are predominantly limestone and clay, contributing to the wines’ characteristic minerality and complexity. The combination of favorable exposure and unique soil composition allows for the production of rich and balanced wines.

Tasting Notes
The 2020 Pouilly-Fuissé from Domaine Merlin presents a rich and fulsome bouquet with notes of melon and honey. On the palate, it is rich and opulent, with an impressive streak of acidity providing a beautiful balance.
Food & Wine Pairing
This Pouilly-Fuissé pairs exceptionally well with white meats, including duck, pork, lamb, and salmon. It also complements pasta dishes with creamy or seafood-based sauces.
Service Methods and Temperatures
To fully appreciate its aromatic complexity and richness, serve the Pouilly-Fuissé at around 12-14°C (54-57°F) in medium-sized white wine glasses. This temperature allows the wine’s nuanced aromas to shine. It’s recommended to open the bottle shortly before serving to preserve its delicate aromatics.
Storage and Aging Potential
While this Pouilly-Fuissé is enjoyable upon release, displaying vibrant fruit flavors and balanced acidity, it also has the potential to develop additional complexity with cellaring. When stored properly in a cool, dark environment with stable temperatures, it can be enjoyed over the next 5 to 7 years, during which it may develop richer textures and more pronounced mineral characteristics.
