Vineyards and Microclimate
The “Domaine Mule Blanche” is sourced from vineyards in the Crozes-Hermitage appellation, specifically from the Domaine de Thalabert, which is the oldest vineyard in the area. The vines, planted between 1956 and 1974, are situated on slopes with deep soils composed of white earth and loess. These soils provide excellent drainage and contribute to the mineral complexity of the wine. The region experiences a continental climate with warm summers and mild winters. The significant diurnal temperature variation aids in preserving acidity and developing aromatic complexity in the grapes. Vinification & Aging Methods
The grapes are hand-harvested and sorted by plot in small 12kg crates to preserve their integrity. They undergo whole-bunch pressing, followed by cold settling to clarify the juice. Fermentation occurs in a combination of oak barrels, concrete eggs, and demi-muids, with the percentage of new wood varying depending on the vintage. The wine is then aged on fine lees to enhance its texture and complexity. Malolactic fermentation is typically avoided to retain freshness and acidity.

Pale blonde in color with silver reflections, this rounded white wine showcases aromas of white peach, lemon peel, and floral notes with a hint of minerality.
