Winery Background and History

Founded in 1974 by Giuseppe Castiglioni, Querciabella is a renowned winery located in Tuscany’s Chianti Classico region. The estate has been a pioneer in adopting organic practices since 1988 and biodynamic viticulture by 2000, emphasizing sustainability and environmental stewardship. This commitment has positioned Querciabella as a leader in producing wines that authentically express the unique terroir of their vineyards. Palafreno, first introduced in 2000, is a testament to the winery’s dedication to crafting exceptional Merlot wines that showcase the varietal’s potential in Tuscany.


Producer and Winemaker

Under the guidance of Sebastiano Cossia Castiglioni, Querciabella continues to uphold its philosophy of minimal intervention and respect for nature. The winemaking team focuses on creating wines that reflect the purity and character of the grape varieties. Their approach combines meticulous vineyard management with precise vinification methods to ensure each bottle embodies the essence of its origin.


Vineyards and Microclimate

The grapes for Palafreno are sourced from the Cipresso and Marrone vineyards, located on a slope close to the cellar buildings in Ruffoli, Greve in Chianti, at elevations between 350 and 400 meters above sea level. These south to southwest-facing vineyards feature loose galestro schistous clay soils, which retain water and maintain cool, consistent temperatures below the vine. This is particularly beneficial in Tuscany’s sunny climate, preventing the Merlot grapes from becoming overripe and losing acidity. The combination of elevation, soil composition, and orientation creates an ideal microclimate for cultivating high-quality Merlot grapes. 


Vinification & Aging Methods

The 2016 Palafreno is crafted exclusively from Merlot grapes. Fermentation occurred in temperature-controlled stainless steel tanks, utilizing indigenous yeasts to preserve the grape’s natural character. The wine was then aged for 18 months in French oak barriques, with 25% being new oak. This aging process imparts subtle oak influences while maintaining the varietal purity and elegance of the Merlot. 


Tasting Notes

The 2016 Palafreno exhibits a deep, vibrant ruby color. The nose is enchanting, offering aromas of black cherry, blackberry, and wild raspberry, complemented by subtle mineral and savory notes. On the palate, it is deep and vibrant, yet also remains light on its feet, featuring flavors of ripe dark fruits, iron, and underbrush. The wine is well-structured with firm, fine-grained tannins and a lively acidity, leading to a long, persistent finish. 


Food & Wine Pairing

Palafreno’s rich and complex profile makes it an excellent companion to dishes such as grilled duck, roasted wild boar, and roasted lamb. Its earthy and herbaceous notes also pair well with dishes featuring mushrooms and root vegetables, which mimic the wine’s woodsy flavors. Additionally, spices and seasonal herbs complement similar notes found in the wine, enhancing the overall dining experience. 


Service Methods and Temperatures

To fully appreciate its aromatic profile and structure, serve the 2016 Palafreno at a temperature of 16–18°C (61–64°F). Decanting the wine for about three hours before serving can help open up its complex bouquet and soften the tannins. Use large, tulip-shaped wine glasses to concentrate the aromas and enhance the tasting experience. 


Storage and Aging Potential

When stored in optimal conditions—cool, dark, and with a consistent temperature—the 2016 Palafreno has the potential to age gracefully until 2040. Over time, the wine will develop more nuanced tertiary aromas and flavors, offering an evolving and rewarding tasting experience for those who choose to cellar it.
