Winery Background and History

Founded in 1877 in Pontassieve, near Florence, Ruffino has been a significant figure in Tuscan winemaking for over 140 years. The winery was established by cousins Ilario and Leopoldo Ruffino, who aimed to produce wines that encapsulate the essence of Tuscany. Over the decades, Ruffino has expanded its portfolio to include a variety of wines, with Vin Santo being a notable example of their dedication to traditional Italian winemaking.

Producer and Winemaker

Ruffino’s Vin Santo del Chianti Serelle is crafted by a team of skilled winemakers who honor the age-old traditions of Vin Santo production. The process involves meticulous selection and drying of grapes, followed by extended aging in small oak barrels. This dedication ensures that each bottle reflects the rich heritage and quality standards that Ruffino is known for.

Vineyards and Micro Climate

The grapes for Serelle are primarily sourced from Ruffino’s Gretole and La Solatia estates in Tuscany. These vineyards benefit from a favorable microclimate characterized by well-drained soils and optimal sun exposure. The combination of warm days and cool nights allows for the gradual ripening of grapes, which is essential for developing the concentrated flavors and balanced acidity required for Vin Santo.

Vinification & Aging Methods

After careful hand-harvesting, the Trebbiano and Malvasia grapes undergo a natural drying process on racks in well-ventilated rooms until December. This appassimento method concentrates the sugars and flavors. The dried grapes are then gently pressed, and the resulting must is fermented in small oak barrels known as “caratelli” at controlled temperatures between 15-17°C. The wine undergoes oxidative aging in these barrels for approximately three years, allowing it to develop its characteristic complexity and depth.

Tasting Notes

Serelle Vin Santo del Chianti presents a deep amber color with golden highlights. The bouquet is rich and inviting, offering aromas of candied fruit, honey, eucalyptus, and citrus, complemented by subtle hints of nutmeg and caramel. On the palate, it is dense and luscious, featuring flavors of dried apricot, pineapple, and fig. The sweetness is well-balanced by a refreshing acidity, leading to a persistent and satisfying finish.

Food & Wine Pairing

This Vin Santo pairs exquisitely with traditional Italian desserts such as cantucci (almond biscotti), enhancing the nutty flavors of the pastry. It also complements rich desserts like panettone and tiramisu. For a savory contrast, consider pairing it with aged cheeses like Pecorino Toscano or Gorgonzola, where the wine’s sweetness balances the cheese’s saltiness.

Service Methods and Temperatures

To fully appreciate the nuances of Serelle Vin Santo del Chianti, serve it slightly chilled at a temperature of 12-14°C (54-57°F). Using a small dessert wine glass will concentrate the aromas and enhance the tasting experience. Pouring modest servings allows the wine’s rich flavors to be savored slowly.

Storage and Aging Potential

When stored properly in a cool, dark environment with a consistent temperature, this Vin Santo has the potential to age gracefully for up to a decade or more. Over time, it may develop more pronounced oxidative notes, adding to its complexity. Once opened, it’s advisable to consume the wine within a week to enjoy its optimal flavors.

Grape Varietals & Percentage Used
