Winery Background and History

Si Tu Sais is a micro-négociant venture established in 2020 by Patrick and Sara, both originally from the United Kingdom. After developing a passion for Burgundy, they relocated to the region and gained experience working at Maison Harbour in Savigny-les-Beaune. Their project, Si Tu Sais, focuses on producing limited quantities of wine with an emphasis on minimal intervention and expressing the unique terroirs of Burgundy.

Producer and Winemaker

Patrick and Sara are the proprietors and winemakers behind Si Tu Sais. They oversee all aspects of production, from vineyard selection to vinification, ensuring that their philosophy of minimal intervention and terroir expression is upheld.

Vineyards and Microclimate

The “Les Vris” vineyard is situated within the Bourgogne Aligoté appellation in Burgundy, France. The region is characterized by its limestone-rich soils and a continental climate, providing optimal conditions for cultivating the Aligoté grape variety.

Grape Varietals & Percentage Used

100% Aligoté

Vinification & Aging Methods

Patrick and Sara adopt a light-touch approach to winemaking. The white wines are fermented in barrels at cool temperatures to emphasize freshness, minerality, and floral notes. Fermentations occur spontaneously with indigenous yeasts, and sulfur is used minimally, typically only at bottling. No other additives, fining, or filtration are employed.

ABV (Alcohol by Volume)

The 2022 vintage has an alcohol content of 11.5%.

Tasting Notes

Specific tasting notes for the 2022 vintage are not readily available. However, based on the winemaking approach and the characteristics of the Aligoté grape, one can anticipate a wine with vibrant acidity, fresh citrus and green apple flavors, and a pronounced minerality.

Food & Wine Pairing

This wine pairs excellently with seafood dishes, salads, and goat cheese. Its acidity and freshness complement these foods, enhancing the overall dining experience.

Service Methods and Temperatures

For optimal enjoyment, serve this wine chilled at a temperature of 8-10°C (46-50°F). Decanting is not necessary; however, allowing the wine to breathe for a few minutes before serving can help open up its aromas and flavors.

Storage and Aging Potential

The 2022 vintage is intended for early consumption to appreciate its freshness and vibrant character. Proper storage conditions—consistent temperature, moderate humidity, and protection from light—will help maintain its quality over the short term.
