Vinification & Aging Methods
Grapes are selected at maturity, then crushed and delicately pressed in a pneumatic press. The wine is vinified in a bone-dry style in stainless steel vats and old casks. No malolactic fermentation or long aging on lees is conducted, preserving freshness, liveliness, and fruity aromas.
