Vineyards and Micro Climate
The grapes for the 2021 Riesling Réserve are sourced from select vineyards in the Ribeauvillé and Bergheim regions, including the lieu-dit of Trottacker-Forst, which features marl, limestone, and sandstone soils. Trimbach’s own old vines, averaging over 45 years, are situated in Ribeauvillé with southeast exposures, contributing to the wine’s complexity and depth. Other notable sites include Haguenau and Pflaenzer, as well as the Grand Cru Altenberg in Bergheim, characterized by limestone soils and very stony red marls rich in fossils, with vines over 50 years old and southern exposures. The 2021 vintage presented challenges due to a humid growing season, demanding meticulous organic practices. Despite a 30% reduction in yield, rigorous selection ensured high-quality fruit, resulting in a classic vintage with high natural acidity. After reaching optimal maturity, the grapes are carefully selected, crushed, and delicately pressed using a pneumatic press to extract the purest juice while minimizing the extraction of bitter compounds from the skins. Fermentation occurs in temperature-controlled stainless steel vats, allowing for precise regulation to preserve the aromatic integrity and freshness of the Riesling grapes. In line with Trimbach’s signature dry style, no malolactic fermentation is conducted, and there is no extended aging on lees. This approach maintains the wine’s natural acidity and vibrant fruit character. The wine is bottled in the spring following the harvest and undergoes a minimum of two years of aging in the cellar before release. This careful vinification process ensures that the wine retains its liveliness and fruity aromas, resulting in a dry, expressive Riesling that reflects both the varietal and the unique terroir of Alsace.
