Winery Background and History

Villa Sandi is a renowned Italian winery located in the Veneto region, housed in a majestic Palladian-style villa dating back to 1622. The estate has been under the stewardship of the Moretti Polegato family since the late 1970s, who have dedicated themselves to preserving this icon of Italian wine culture. Villa Sandi is recognized for its commitment to sustainable farming and winemaking practices, producing a range of wines from approachable Prosecco DOC to the esteemed Valdobbiadene Prosecco Superiore DOCG and the special Cartizze cru. The winery also offers still wines, including Pinot Grigio and a limited production of Pinot Noir for their Il Fresco Rosé.

Producer and Winemaker

The Moretti Polegato family, with a history of grape growing since the 1920s, owns and operates Villa Sandi. Giancarlo Moretti Polegato, the current proprietor, emphasizes the integration of tradition and innovation in winemaking. The winemaking team focuses on producing fresh Prosecco by initiating 100% of production from refrigerated must, ensuring the preservation of the wine’s aromatic qualities and freshness.

Vineyards and Micro Climate

The grapes for this Prosecco are sourced from the DOCG area of Conegliano-Valdobbiadene, a hilly region of morainic origin with calcareous soils mixed with loam and, in some areas, calcareous-clayey soil. The vineyards employ single espalier, double canopy, and radiating training systems with a planting density of 2,500 vines per hectare. The microclimate of this area, characterized by its hilly terrain and favorable weather conditions, contributes to the development of grapes with balanced acidity and aromatic profiles ideal for high-quality Prosecco production.

Vinification & Aging Methods

Whole grapes undergo soft pressing in a pneumatic press. The resulting must is stored in temperature-controlled tanks until needed. Secondary fermentation occurs in stainless steel vessels at 15-16°C to enhance the wine’s aromatic profile. Once the desired alcohol and sugar levels are achieved, fermentation is halted by refrigeration. After a brief settling period, the sparkling wine is bottled, ensuring freshness and the preservation of its delicate flavors.

Tasting Notes

This Prosecco exhibits intense fruity aromas with clear hints of ripe golden apple and elegant floral notes reminiscent of acacia flowers. On the palate, it is fresh, slightly sweet, and soft, culminating in a flavorful, balanced finish. The wine’s gentle bubbles and harmonious acidity make it a delightful and refreshing choice for various occasions.

Food & Wine Pairing

Excellent as an aperitif, this wine pairs well with fish marinated with delicate aromatic herbs and herb-based first courses. Its balanced acidity and subtle sweetness complement dishes such as seafood salads, light pasta dishes with herbs, and sushi, enhancing the overall dining experience.

Service Methods and Temperatures

Serve chilled at a temperature of 6-8°C to fully appreciate its aromatic profile and refreshing qualities. Using a tulip-shaped sparkling wine glass will concentrate the aromas and enhance the tasting experience. Pour gently to preserve the wine’s effervescence.

Storage and Aging Potential

Prosecco is best consumed young to enjoy its fresh and fruity characteristics. Store bottles in a cool, dark place, away from direct sunlight and temperature fluctuations. For optimal enjoyment, consume within a year or two of purchase.

Grape Varietals & Percentage Used

Primarily composed of Glera grapes, the traditional varietal for Prosecco production. Some sources indicate a blend of 85% Glera and 15% Chardonnay, though this may vary by vintage and specific production choices.
