Producer and Winemaker: Celestino Gaspari, the founder and winemaker of Zýmē, is a visionary in the Italian wine industry. Having honed his skills under the mentorship of Giuseppe Quintarelli, Gaspari brings a wealth of knowledge and passion to his craft. Vineyards and Microclimate: The “Réverie” Valpolicella is sourced from vineyards situated in the eastern part of Valpolicella, specifically in the areas of Marcellise di San Martino Buon Albergo and Lavagno. These vineyards are characterized by calcareous-clay soils, which provide excellent drainage and contribute to the mineral complexity of the wine. The region experiences a temperate climate with significant diurnal temperature variations, fostering the development of vibrant acidity and aromatic complexity in the grapes.
