Winery Background and History: Founded in 1999 by esteemed winemaker Celestino Gaspari, Zýmē is a distinguished winery located in the heart of the Valpolicella Classico zone in Veneto, Italy. The name “Zýmē” derives from the Greek word for “yeast,” symbolizing the natural fermentation process and the winery’s commitment to blending tradition with innovation. Gaspari, with a rich background including mentorship under Giuseppe Quintarelli, emphasizes sustainable viticulture and the authentic expression of terroir in his wines. The Valpolicella Classico Superiore stands as a testament to Zýmē’s dedication to producing elegant and refined wines that honor the region’s heritage.


Producer and Winemaker: Celestino Gaspari, the visionary behind Zýmē, brings decades of winemaking expertise to the estate. His philosophy centers on minimal intervention, allowing the natural characteristics of the grapes and their environment to shine. Vineyards and Microclimate: The Valpolicella Classico Superiore is sourced from vineyards situated in the Valpolicella Classico region, renowned for its calcareous-clay soils. This soil composition provides excellent drainage and contributes to the mineral complexity of the wine. The area experiences a temperate climate with significant diurnal temperature variations, fostering the development of balanced acidity and aromatic depth in the grapes. These conditions are ideal for cultivating the traditional varietals that comprise the Valpolicella blend.

Vinification & Aging Methods: The 2019 Valpolicella Classico Superiore is crafted following the traditional “Ripasso” method. Fermentation of fresh grapes occurs in September and October at natural temperatures. In January, a second fermentation takes place over approximately 14 days on the skins of Amarone, enhancing depth and complexity. The wine then undergoes maturation for at least three years in large Slavonian oak ovals, followed by an additional six months of bottle aging. This meticulous process results in a wine that harmoniously balances fruit richness with structural elegance.

Tasting Notes: The 2019 Valpolicella Classico Superiore exhibits a medium ruby red color, tending towards garnet with age.
