Winery Background and History
Founded in 1974 by Donald Ziraldo and Karl Kaiser in the Niagara Peninsula, Ontario, Inniskillin is Canada’s original estate winery. The name “Inniskillin” is derived from the Irish Regiment, the Inniskilling Fusiliers, paying homage to the region’s historical ties. Inniskillin gained international acclaim in 1991 when its Vidal Icewine won the Grand Prix d’Honneur at Vin Expo France, firmly establishing Canada’s reputation in the global wine community.

Vineyards and Microclimate
The Niagara Peninsula benefits from a unique microclimate influenced by the Great Lakes, providing ideal conditions for viticulture. The region’s cold winters are particularly suited for Icewine production, allowing grapes to naturally freeze on the vine, concentrating their sugars and flavors.
Vinification & Aging Methods
For the 2017 Cabernet Franc Icewine, grapes were left to freeze naturally on the vine and harvested at temperatures of -8°C or lower. The frozen grapes were then pressed, yielding a highly concentrated juice. Fermentation occurred slowly over several weeks in stainless steel tanks to preserve the wine’s vibrant fruit character.
