Vineyards and Microclimate

Vinification & Aging Methods
After hand-harvesting, the grapes undergo fermentation in stainless steel tanks with a 10–12 day maceration period, employing a soft “shower” system to wet the cap. Malolactic fermentation follows in steel tanks. The wine is then aged for 12 months in large oak casks, followed by additional refinement in the bottle for a minimum of 6–8 months.
