Winery Background and History

Producer and Winemaker

Michele Chiarlo, the founder, has been instrumental in elevating the reputation of Piedmontese wines on the global stage. His son, Stefano Chiarlo, continues the legacy, overseeing viticulture and winemaking. Their philosophy centers on minimal intervention, allowing the character of each vineyard to shine through. Vineyards and Microclimate

The Nebbiolo grapes for Palás Barolo are sourced from vineyards in the Barolo region, characterized by calcareous clay soils and a continental climate with significant diurnal temperature variations. These conditions contribute to the development of complex aromas and flavors in the wines, reflecting the distinctiveness of the region.


Vinification & Aging Methods

After hand-harvesting, the grapes undergo a 13–14 day maceration in stainless steel tanks at controlled temperatures between 27°C and 32°C. A gentle “shower” system is used to wet the cap, ensuring delicate extraction of color and tannins. Malolactic fermentation follows in steel tanks. The wine is then aged for a minimum of 3 years, including 24 months in large oak casks, followed by additional refinement in the bottle.


Tasting Notes

Palás Barolo 2019 displays a garnet red color with bright reflections. The nose is complex and elegant, featuring aromas of cherry and berry fruit, hints of tobacco, and spice. On the palate, it is medium-bodied with smooth, well-integrated tannins and a spicy fruit finish.

This Barolo pairs excellently with roasted meats, wild game, and hard cheeses. Its refined structure and aromatic profile also complement truffle-based dishes and mushroom risottos, making it a versatile choice for various culinary experiences.


Service Methods and Temperatures

Serve Palás Barolo at a temperature of 18°C (64°F) to fully appreciate its aromatic nuances and structural balance. Decanting for about 30 minutes before serving can enhance its complexity. Use large red wine glasses to allow the wine to breathe and express its full bouquet.


Storage and Aging Potential

While Palás Barolo is enjoyable upon release, it has the potential to age gracefully for up to 10 years. Proper storage in a cool, dark place with stable temperatures will allow the wine to develop additional nuances, such as tertiary aromas of leather and dried herbs, enhancing its overall complexity.
