Winery Background and History

Founded in 1974 by Giuseppe Castiglioni, Querciabella is a renowned winery located in Tuscany, Italy. The estate has been a pioneer in adopting organic practices since 1988 and biodynamic viticulture by 2000, emphasizing sustainability and environmental stewardship. This commitment has positioned Querciabella as a leader in producing wines that authentically express the unique terroir of their vineyards. Batàr, first produced in 1988, is the winery’s flagship white wine, showcasing their dedication to crafting exceptional white wines in a region predominantly known for reds. 


Producer and Winemaker

Under the guidance of Sebastiano Cossia Castiglioni, Querciabella continues to uphold its philosophy of minimal intervention and respect for nature. The winemaking team focuses on creating wines that reflect the purity and character of the grape varieties. Their approach combines meticulous vineyard management with precise vinification methods to ensure each bottle embodies the essence of its origin.


Vineyards and Microclimate

The grapes for Batàr are sourced from vineyards located close to the winery on the slopes of Ruffoli, Greve in Chianti, at elevations ranging from 350 to 600 meters above sea level. These high-altitude sites feature diverse soils, including galestro and sandstone, contributing to a unique microclimate that enhances the aromatic complexity and structural balance of the wines. The varying elevations and soil compositions create optimal conditions for ripening, with cool temperatures preserving acidity and promoting slow, even maturation of the grapes. 


Vinification & Aging Methods

The 2021 Batàr is crafted from a blend of 50% Chardonnay and 50% Pinot Blanc. Fermentation occurred in French oak barriques, utilizing indigenous yeasts to preserve the grape’s natural character. The wine was then aged for nine months in fine and extra fine-grained French oak Burgundy barriques (228 liters), with 20% being new oak. Bâtonnage was carried out weekly during this period. This aging process imparts subtle oak influences while maintaining the varietal purity and elegance of the blend. 


Tasting Notes

The 2021 Batàr opens with aromas of lemon zest, tangerine, and hints of tropical fruits. On the palate, it offers a rich and creamy texture balanced by vibrant acidity, showcasing flavors of ripe citrus, stone fruits, and subtle notes of vanilla and toasted almonds. The wine’s minerality and well-integrated oak contribute to a long, elegant finish. 


Food & Wine Pairing

Batàr’s rich texture and complex flavor profile make it an excellent companion to dishes such as roasted poultry, creamy risottos, and seafood like lobster or scallops. Its vibrant acidity and minerality also complement dishes featuring earthy flavors like mushrooms and truffles. The wine’s versatility allows it to pair well with a variety of cuisines, enhancing both the food and the wine.


Service Methods and Temperatures

To fully appreciate its aromatic profile and structure, serve the 2021 Batàr at a temperature of 6–8°C (43–47°F). Decanting is not necessary, but allowing the wine to breathe for about 15–30 minutes before serving can help open up its complex bouquet. Use medium-sized, tulip-shaped wine glasses to concentrate the aromas and enhance the tasting experience.


Storage and Aging Potential

While Batàr is enjoyable upon release, it is recommended to wait four years after harvest for more complex notes to emerge. The wine continues to develop and evolve for over 20 years when stored in optimal conditions—cool, dark, and with a consistent temperature—offering an evolving and rewarding tasting experience for those who choose to cellar it.
